What is a cheese sausage?

Cheese sausage is a charcuterie made from finely minced pork into which pieces or a filling of cheese are folded. The mixture is then cased in a natural casing before being dried using traditional artisan methods. The result is a striking contrast between the robust flavour of the cured meat and the milky softness of the cheese.
